Ingredients

  • 1 lb lobster tails, cooked and chopped
  • 2 medium zucchini spiralized into noodles
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • ¼ teaspoon red pepper flakes optional
  • Salt and black pepper to taste
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley, chopped for garnish
  • ¼ cup heavy cream optional for a creamier sauce

Instructions

  • Start by spiralizing the zucchini to create zoodles. If you don’t have a spiralizer, you can use a vegetable peeler to create thin strips. Set aside.
  • If using raw lobster tails, boil them in salted water for about 8-10 minutes until fully cooked. Once cooled, chop the lobster meat into bite-sized pieces. If using pre-cooked lobster, simply chop and set aside.
  • In a large skillet over medium heat, melt the butter. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
  • Stir in the chopped lobster meat and red pepper flakes (if using) into the skillet. Cook for an additional 2-3 minutes, allowing the flavors to meld.
  • Add the spiralized zucchini noodles to the skillet. Toss gently to combine with the lobster and garlic mixture. Cook for about 2-3 minutes, just until the zoodles are tender but still al dente.
  • If you prefer a creamier sauce, add the heavy cream at this stage and mix well. Let it simmer for an extra minute.
  • Drizzle the fresh lemon juice over the dish and season with salt and black pepper to taste. Toss everything together to ensure the zoodles are coated in the buttery lobster sauce.
  • Remove from heat and garnish with chopped parsley. Serve immediately and enjoy your delicious Buttered Lobster Zoodles!

Notes
