Ingredients

  • 4 medium zucchini (about 1 lb / 450 g)
  • 2 cups cooked shredded chicken (about 10 oz / 280 g)
  • ½ cup buffalo sauce (120 ml)
  • ½ cup cream cheese softened (4 oz / 115 g)
  • ½ cup shredded cheddar cheese (2 oz / 56 g)
  • ¼ cup green onions chopped (about 2-3 onions)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • salt and pepper to taste
  • olive oil for brushing

Instructions

  • Preheat your oven to 375°F (190°C).
  • Wash the zucchinis thoroughly. Slice each zucchini in half lengthwise and scoop out the seeds using a spoon to create a hollow boat. Brush the insides of the zucchini with olive oil and season with salt and pepper.
  • In a large mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, half of the cheddar cheese, chopped green onions, garlic powder, onion powder, salt, and pepper. Mix until everything is well combined.
  • Spoon the buffalo chicken mixture into each zucchini boat, packing it in generously.
  • Sprinkle the remaining cheddar cheese evenly over the filled zucchini boats.
  • Place the zucchini boats on a baking sheet and bake in the preheated oven for 25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
  • Once done, remove the zucchini boats from the oven and let them cool for a few minutes. Garnish with additional chopped green onions if desired and serve warm.

Notes

Feel free to adjust the spice level by using more or less buffalo sauce. For a creamier filling, you can add more cream cheese or a dollop of sour cream before baking. These zucchini boats can also be made ahead of time and stored in the fridge for a quick meal prep option.
