Ingredients

  • 3 pounds beef chuck roast
  • 1 pound radishes, trimmed and halved
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 medium onion, sliced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon dried thyme
  • 2 bay leaves

Instructions

  • Preheat your oven to 300°F (150°C).
  • Season the beef chuck roast with salt and pepper on all sides.
  • In a large oven-proof pot or Dutch oven, heat the olive oil over medium-high heat. Add the chuck roast and sear it until browned on all sides, approximately 3-4 minutes per side.
  • Remove the roast from the pot and set aside. In the same pot, lower the heat to medium and add the onion and garlic. Sauté until they turn translucent and fragrant, about 2 minutes.
  • Place the roast back into the pot. Add the radishes around the roast.
  • Pour in the beef broth and Worcestershire sauce. Sprinkle in the dried thyme and add the bay leaves.
  • Cover the pot with a lid and place it in the preheated oven. Cook for about 4 hours, or until the beef is tender and pulls apart easily with a fork.
  • Remove the pot from the oven and let it rest for 10 minutes before slicing the roast. Serve hot with the radishes and a spoonful of the cooking juices.

Notes

For a thicker gravy, remove the roast and radishes after cooking, set the pot over medium heat, and simmer the juices. You can thicken the gravy with xanthan gum (about 1/4 teaspoon) whisked into the simmering liquid until it reaches your desired consistency.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently to preserve the tenderness of the beef.
