Ingredients

  • 2 (6-ounce each) Rainbow trout fillets [170g each]
  • 2 tablespoons Extra virgin olive oil [30ml]
  • 1 tablespoon Fresh lemon juice [15ml]
  • 2 cloves Garlic, minced [6g]
  • 2 tablespoons Fresh dill, chopped [6g]
  • ½ teaspoon Sea salt [3g]
  • ¼ teaspoon Ground black pepper [1g]
  • 4-6 slices Lemon slices for garnish
  • Fresh dill sprigs for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • Rinse the trout fillets and pat them dry with paper towels. Ensure there are no bones by running your fingers along the flesh.
  • In a small bowl, mix together the olive oil, fresh lemon juice, minced garlic, chopped dill, sea salt, and ground black pepper to create the marinade.
  • Place the trout fillets skin-side down on a baking sheet lined with parchment paper.
  • Spoon the marinade evenly over the trout fillets, ensuring they are well coated.
  • Place the lemon slices on top of the fillets, adding an extra layer of flavor as they bake.
  • Bake in the preheated oven for about 20 minutes, or until the trout is opaque and flakes easily with a fork.
  • Remove from the oven and let it rest for a couple of minutes.
  • Garnish with fresh dill sprigs before serving.

Notes
