Instructions
Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with olive oil or line with silicone muffin liners.
In a skillet over medium heat, cook the Italian sausage until browned and crumbly. Drain any excess grease and set aside to cool slightly.
In a large bowl, whisk together eggs, heavy cream, salt, and pepper until well combined.
Stir in the cooked sausage, shredded mozzarella, grated parmesan, chopped spinach, and diced bell pepper until evenly distributed.
Pour the mixture into the prepared muffin cups, filling each about 2/3 full.
Bake in the preheated oven for 20 minutes, or until the mini frittatas are set and the tops are lightly golden.
Remove from the oven and let cool for a few minutes before removing from the muffin tin.
