Ingredients

  • ½ pound Italian sausage 226g
  • 1 cup shredded mozzarella cheese 113g
  • ¼ cup grated parmesan cheese 30g
  • 6 large eggs
  • ½ cup heavy cream 120ml
  • ½ tsp salt 2.5g
  • ¼ tsp black pepper 1g
  • 1 tbsp olive oil 15ml
  • ½ cup chopped spinach 30g
  • ¼ cup finely diced bell pepper about 30g

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with olive oil or line with silicone muffin liners.
  • In a skillet over medium heat, cook the Italian sausage until browned and crumbly. Drain any excess grease and set aside to cool slightly.
  • In a large bowl, whisk together eggs, heavy cream, salt, and pepper until well combined.
  • Stir in the cooked sausage, shredded mozzarella, grated parmesan, chopped spinach, and diced bell pepper until evenly distributed.
  • Pour the mixture into the prepared muffin cups, filling each about 2/3 full.
  • Bake in the preheated oven for 20 minutes, or until the mini frittatas are set and the tops are lightly golden.
  • Remove from the oven and let cool for a few minutes before removing from the muffin tin.
  • Serve warm or at room temperature.

Notes

These mini frittatas can be stored in an airtight container in the refrigerator for up to 4 days.
For a spicier kick, use hot Italian sausage or add a pinch of red pepper flakes to the egg mixture.
Feel free to substitute sausage with bacon or ham as desired.
To reheat, simply microwave for 30-60 seconds or warm in the oven until heated through.
