  • 8 fresh jalapeños, halved and seeded
  • 8 slices bacon, cut in half
  • 4 oz cream cheese, softened
  • ½ cup shredded cheddar cheese
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp black pepper
  • Fresh cilantro, for garnish

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  • Cut the jalapeños in half lengthwise and remove the seeds and membranes (wear gloves to protect your hands).
  • In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, garlic powder, smoked paprika, and black pepper. Mix until well combined.
  • Using a small spoon or a piping bag, fill each jalapeño half with the cheese mixture, ensuring they are generously filled.
  • Take a half slice of bacon and wrap it around each stuffed jalapeño, securing it as you go. You can use a toothpick to hold the bacon in place if needed.
  • Place the bacon-wrapped jalapeños on the prepared baking sheet, ensuring they are spaced apart for even cooking.
  • Bake in the preheated oven for 20-25 minutes, or until the bacon is crispy and the jalapeños are tender. You may want to broil them for an additional 2-3 minutes at the end for extra crispiness.
  • Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro if desired, and serve warm.

Notes

For extra flavor, consider adding a dash of hot sauce to the cream cheese mixture. These bites can be made ahead of time and stored in the refrigerator before baking; just increase the baking time by a few minutes if they are cold from the fridge.
