Ingredients

  • 1 lb Brussels sprouts trimmed and halved
  • 8 oz bacon cut into thirds
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika

Salt and pepper

  • 8 wooden skewers soaked in water for 30 minutes

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine the halved Brussels sprouts with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss everything together until the sprouts are evenly coated.
  • Take a piece of bacon and wrap it around each Brussels sprout half. Secure the bacon with a skewer by inserting it through the wrapped sprout. Repeat this process until all the Brussels sprouts are wrapped and skewered.
  • Place the skewers on a baking sheet lined with parchment paper. Make sure they are spaced apart to allow the fat to render and the bacon to crisp up.
  • Put the baking sheet in the preheated oven and bake for 15-20 minutes. After 10 minutes, flip the skewers to ensure even cooking. They are done when the bacon is crispy and the Brussels sprouts are tender.
  • Once cooked, remove the skewers from the oven and let them cool slightly. Serve warm, and enjoy!

Notes

For an extra kick, consider adding a sprinkle of chili flakes or your favorite hot sauce before serving. These skewers can be made ahead of time and stored in the refrigerator. Simply reheat in the oven for 5-10 minutes at 350°F (175°C) before serving.
