Ingredients

  • 2 whole ripe avocados (about 12 oz / 340 g)
  • 8 slices bacon (about 10 oz / 280 g)
  • 1 cup shredded cheddar cheese (about 4 oz / 113 g)
  • 1 tbsp olive oil (about 15 ml)
  • 1 tsp garlic powder (about 2 g)
  • 1 tsp smoked paprika (about 2 g)
  • salt and pepper to taste
  • fresh cilantro for garnish (optional)

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.
  • Cut the avocados in half and remove the pit. Scoop out a small amount of flesh from the center to create a larger cavity for the filling. Be careful not to tear the skin.
  • In a mixing bowl, combine the shredded cheddar cheese, olive oil, garlic powder, smoked paprika, salt, and pepper. Mix well until everything is evenly coated.
  • Generously fill each avocado half with the cheese mixture. Press down gently to ensure the filling is compact.
  • Take a slice of bacon and wrap it tightly around each stuffed avocado half. Use toothpicks if necessary to secure the bacon in place.
  • Place the bacon-wrapped avocados on the prepared baking sheet. Bake in the preheated oven for 20 minutes, or until the bacon is crispy and golden brown.
  • Once cooked, remove the avocado bombs from the oven and let them cool for a few minutes. If desired, garnish with fresh cilantro before serving. Enjoy these delicious bites warm!

Notes

For a spicy kick, consider adding diced jalapeños to the cheese filling. These avocado bombs can be made ahead of time and stored in the refrigerator before baking. Leftovers can be reheated in the oven or microwave for a quick snack.
