Ingredients

  • 1 pound fresh asparagus trimmed
  • 8 slices bacon
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon zest
  • salt to taste
  • pepper to taste
  • 1 tablespoon balsamic glaze optional for drizzling

Instructions

  • Preheat your oven to 400°F (200°C).
  • Rinse the asparagus under cold water to remove any dirt. Trim the tough ends, about 2 inches from the bottom.
  • In a large bowl, drizzle the asparagus with olive oil, then sprinkle with garlic powder, lemon zest, salt, and pepper. Toss gently to coat all the spears evenly with the seasoning.
  • Take one slice of bacon and wrap it around one asparagus spear, starting from the bottom and spiraling up to the tip. Repeat for all asparagus spears, using two slices of bacon for each bundle.
  • Place the bacon-wrapped asparagus bundles on a baking sheet lined with parchment paper or a silicone mat.
  • Bake for 20 minutes, or until the bacon is crispy and the asparagus is tender. Optionally, broil for an additional 2-3 minutes for extra crispiness.
  • Once cooked, remove the bundles from the oven and let them cool for a minute. Drizzle with balsamic glaze if desired and serve warm.

Notes

Feel free to experiment with different seasonings, such as smoked paprika or cayenne pepper, for an added kick. These bundles can be made ahead of time and stored in the refrigerator for up to 24 hours before baking.
