Ingredients

  • 2 cups almond flour (200g)
  • ¼ cup erythritol or any keto-friendly sweetener (50g)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 3 large eggs
  • ¼ cup unsweetened almond milk (60ml)
  • ¼ cup melted coconut oil or unsalted butter (60ml)
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon (optional) for added flavor

Instructions

  • Preheat your oven to 350°F (175°C) and grease a donut pan with cooking spray or a light coating of coconut oil.
  • In a large mixing bowl, combine the almond flour, erythritol, baking powder, baking soda, salt, and optional cinnamon. Whisk them together until well mixed.
  • In a separate bowl, whisk together the eggs, almond milk, melted coconut oil (or butter), and vanilla extract until smooth and combined.
  • Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Be careful not to overmix; a few lumps are okay.
  • Using a piping bag or a spoon, carefully fill each cavity of the donut pan about 3/4 full with the batter.
  • Place the donut pan in the preheated oven and bake for 12-15 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.
  • Once baked, remove the donut pan from the oven and let it cool for about 5 minutes. Then, carefully transfer the donuts to a wire rack to cool completely.
  • For a simple glaze, mix 1/2 cup (50g) powdered erythritol with 2-3 tbsp of almond milk until smooth. Dip the tops of the cooled donuts in the glaze for a sweet finishing touch.

Notes

These donuts can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. They also freeze well, making them a perfect make-ahead treat. Enjoy them fresh, or warm them up slightly for a delightful breakfast or snack!
