Ingredients

  • 500 g minced pork
  • 320 g frozen cauliflower rice
  • 3 tbsp olive oil
  • 3 tbsp soy sauce
  • 2 tsp balsamic vinegar
  • 2 ½ tsp garam masala
  • 1 tsp medium chilli powder
  • ½ tsp onion powder

Instructions

  • Over medium heat, warm up a pan with 2 tablespoons of olive oil. When ready, add the minced pork and cook, stirring frequently using a spoon, until browned.
  • Carefully add the soy sauce and mix well.
  • Add the spices and mix well. Use 2 teaspoons of garam masala and all the chilli powder. Cook for a few minutes.
  • When the pork is almost ready, carefully add the balsamic vinegar and mix well. Keep stirring for another 30 seconds.
  • Once ready, taste and adjust the amount of spices according to your preferences. Ensure the meat is fully cooked before eating it.
  • In a separate pan, cook the cauliflower according to the instructions on the package. Add spices and olive oil at the end. Use 1/2 teaspoon of garam masala and 1 tbsp of olive oil.
  • Place both cooked pork and cauliflower rice in a bowl, add the toppings (if you are using them) and serve warm.

Notes

  • Optional toppings: finely chopped parsley, slices of fresh chillies and spring onions. These toppings are not included in the nutritional information written below.
  • The cooking time is listed as 15 minutes because allowing the minced pork to cook a little bit longer will improve the overall flavour profile of the stir fry. You can skip this step but ensure the meat is fully cooked before eating it.
  • This recipe makes 4 small portions or bigger portions.
  • You can use lean minced pork if you prefer.
