Ingredients

  • 380 g frozen shrimp
  • 250 g cabbage
  • 60 g red onion
  • 1 ½ tbsp olive oil
  • 2 tsp garam masala
  • 1 tsp smoked paprika
  • ½ tsp medium chilli powder
  • tsp onion powder
  • a pinch of chilli flakes
  • a pinch of salt

Instructions

  • Preheat the oven to 190C.
  • Prepare all the vegetables, finely sliced.
  • Place the vegetables in a baking pan, drizzle with 1 1/2 tablespoon of olive oil and mix well. Cook for 5 minutes in the oven.
  • Prepare the shrimp and mix them with the blend of spices.
  • Remove the baking pan from the oven and add the shrimp on top of the veggies. Place in the oven for 7 minutes. Remove from the oven, turn all the shrimp and place in the oven for 7 more minutes. Take this cooking time as a reference and adjust it to your needs: the cooking time will be different based on the size of your shrimp; ensure the seafood is fully cooked through before serving.
  • Add any toppings of choice before serving. Serve warm.

Notes

  • This keto sheet pan dinner is already delicious on its own but it gets even better with some sauce drizzled all over it and a few leaves of fresh mint. You can easily make this sauce with 25 g tahini (sesame paste), 25 ml water and 5 ml olive oil. Mix well and adjust the consistency with more water or tahini if needed. The sauce is not included in the nutritional information written below.
  • This recipe makes 2 servings as dinner but it could easily serve 3 people if used as an appetizer.
